Wow, Its been a LONG time since I have been...

Here! I know that I have been busy this past summer and going into the Fall... and already i am looking at Halloween! One day I was looking through my email, and this recipe struck me like.. What have been waiting for! I am in the mood for this then, and I am in the mood for it now! Beef Stroggie! Yeppers.. I think I will try to cook tonight, but it may be too warm of a day for this!

Beef Stroganoff Casserole

This savory beef dish has been a family favorite for many years…and with good reason!
Ingredients

1 lb. Ground beef
1 can Cream of mushroom soup; condensed
8 oz. Sour cream
1 can (small) black olives; sliced
1 can (small) mushroom stems and pieces
12 oz. Egg noodles
Directions

Cook egg noodles according to directions and set aside. Cook ground beef until it is no longer pink. Drain off grease. Add soup, sour cream, olives, mushrooms, and noodles and cook until heated through.

Serves 4

Of course this is the cheating way, in my opinion, but I think t just might work today!

Three Nutrition Tips for Diabetes

Managing diabetes mindfully means more than just monitoring blood sugar levels. It also means making prudent choices in your diet to address the risk factors of common diseases associated with diabetes, such as heart disease, high blood pressure and stroke. Work with your physician and a dietician to create a meal plan that best suits your needs. Research has shown that several nutritional elements may be helpful in managing diabetes-related issues:

1. Eat more magnesium-rich foods such as spinach, tofu, almonds, broccoli, lentils, pumpkin seeds and sunflower seeds.

2. Increase intake of foods rich in omega-3 fatty acids, such as cold-water oily fish, fish-oil supplements, walnuts and freshly ground flaxseed.

3. Choose foods that are lower on the glycemic index and have a low glycemic load, such as beans, lentils and whole-grain breads.

Something I just wanted to share!...Learning is such a process, isn't it ?

Knowing what I need to do!

Well, I know that recently, I have been a little... uh... is sloppy on my blog pages, or at least I feel that not all my blogs/posts are just not quite complete! and I apolojize for that... I know that I have been quite brief with my entries, and I am starting to feel a little guilty for that. Right now I am listening to Alison Krause, with the headphones on. Its been a while that I have just sit and listen to her music, and well, its bringing me back to when I was listening to her music all the time.. morning, noon and night!

Anyways, this picture that I took one morning as I was taking my daughter work..... I was not real sure as to what I should have done! I debated whether or not I should have pulled into this gas station and demanded that they honored the sign that was displayed. LOL.... The station that was across the street said the regular 87 Octane was going at 3.71! Well, the sign actually struck me in mid stream.. I had to stop and take a picture of it! Note -this picture was taken April 27, in the City of San Francisco...and that would be .. in 2007!
So, with that said, I decided to try to make my signs correct, and that is when I noticed that my bloggs have not been ..... well.... time to think about maintenance!

I was thinking last night, that... Well, many of you know that my brother passed away, and I have had some pretty heavy duty issues that I have had to face. Anyway, I was thinking... My God, its just been a little over 4 months..... and I think, how could I have gone through so much in such a little time. I am glad though that somethings are just coming together! Sometimes its times like this that I realize just how much I have to be 'Aware of' things that have pushed aside, and to readdress things!

Are you getting Enough B12?

Vitamin B12, also known as cyanocobalamin, is a water-soluble vitamin that is vital for healthy cells: it affects the development and maintenance of red blood cells, nerve cells, and normal myelination (covering) of nerve cells. It also aids in the production of DNA and RNA, and the synthesis of neurotransmitters. We can obtain vitamin B12 only from animal foods, including dairy, eggs, meat, fish, poultry, and shellfish, so vegetarians and vegans are often at risk for B12 deficiency.

New York switches from real to fake grass

NEW YORK (UPI) -- New York plans to spend about $150 million installing 100 synthetic playing fields in parks across the city over the next five years.

The artificial turf, which is supposed to be spongy enough to prevent most injuries, is cheaper and easier for Parks Department workers to maintain, the New York Post reported Monday.

The Parks Department started installing synthetic fields in 2002 and there are already 74 of them in parks across the city.

The turf, consisting of plastic grass on a bed of crushed old rubber tires, saves the city about $15,000 a year per field in maintenance costs, said the Post.

It also provides "a softness and sponginess that's more like real grass," said Parks Commissioner Adrian Benepe.

Knowing what I Should Do!

Hey you all,

I know that my sugar has been running high! Number one... I have been sick, so that ususally means that your sugar usually is high! Today, I worked a little bit, and well, actually I did some cooking for a bunch of folks and it was awesome! I was proud to have been putting in some time, and weel, we made some homemade Macaroni and Cheese with Ham! Yepp, that is right, it was good, and we cooked for about 150 people. It felt good, but I found that my shoulder was starting to hurt when we were putting the cheese in with the mac!

It feels good to sit back and relax! And there are people here that are willing to learn and with what I know.. I am glad to help!Anyways.... I just wanted to let you know that I am alive and kicking here in Good ole San Jose, California!

We first cooked the macaroni and then cut the ham into chunks, and then put in the cheese.. it was a Trio cheese! and then we also crumpled up some bread crumbs, and sprinkled on top... and let it bake for a minute :)) MMMmmmmmmmmm it was good! Anyways.... Time for me to catch up on my fellow blogs

Well here I am

I do believe that I am learning a lesson of my life being amoung the people of a 'homeless shelter'. It is not as bad as I imagined it to be. There are counselors here to help out the situation. I never would have thought that I would be doing something like this... Oh my.. especially at age... LOL I do have to make light of the situation, and I am glad that my son is with me. I believe that if he was not, I probably would have lost it already! I am not saying that I trust everyone that I meet, but I am saying that I can assist some one when they are in need.
There are some people that I have met, that are as real as you and I. Then there are people that really do know how to work this system!! Wow! Amazing! Tonight at supper time., I was accused of spitting on the lady that was sitting behind me! OK! I know that it is those kinds of things that I really have to ignore! I mean, I know that I have talent... but.... whoa!!! on this one. I did not think that I had .... that skill!

Realization of What It is!

I was reading my son's Blog and I started to think about what really is happening to us. Yes, have to admit, that I have been wayyy out there on a cloud and he has been pretty much doing what he can to make sure that I have been alright. There has been a couple of posts that had me thinking, and that what our landlord had done to us really has been a Fucked up thing. (excuse my language). I am now realizing that the people that I have encountered here in the South Bay, really Suck!

I think back a couple of years, and I must say that I have gone through a lot. Yes, I realized that my kindness to people has been taken advantaged of. Yes, I was used, and I had to eat my mess. I guess you can say that being the sap that I am, well, got me into a lot of the mess that I am in now. I have been this way all of my life. My motto has always been, that If I can help out in any way, then I should. I tend not to think that way anymore, because I always get burned. I pretty much have grown cold to things that should not be so cold. People! Yepp, you read this right. :(

When I told my ex to leave, that was one of the bravest things that I have done. Since he has been gone, I have had an opportunity to be myself, and for the most part I think that I am an okay kind of person. I have found that you have to be happy with yourself first. before you can make anyone else happy. With that said, I know that I am happy in that way. I don't think that my immediate self needs to be changed to say that I am happy. Um... the point being, that I have yet to meet people, that are warm, caring, non back stabbing people since I have come back to California.

I am a native Californian, for that matter, I am a native San Franciscan. I was raised in an era.. Of Love, Peace, and Happiness. I still keep in touch with a few of my school friends, and those are the people, the kind of people that I really miss meeting and sharing my life with. Since my return to California, a little over seven years ago, I have met, people that do not think twice about stabbing someone in the back, people that are cold hearted, a very fast environment. See, what I gather is that people are the way they are out here is because they do not have the time! They do not have the time to care. They are too busy. And the fact that California is such a rich state, you know that MONEY, has a lot to do with their meaning. That is very very scary.
I have had the opportunity to work with alot of people of the upcoming generation. Now, That is a scary thing. Why? Well, one is that I had heard.. or read somewhere, that this upcoming generation... is ready to give up their first amendment rights, because it is too much of a bother? Come on now! Then there is the 'youngster' that I worked with that thought he was all that! That is until someone older decided to make more sales than him... then what? Oh yea, whining to the boss. Yes, the one that can sit there and list all the mistakes you have made, but when you find a mistake that he has made... oh, just fix it! Hmmmmm.... What does that tell me?

It tells me that they are not willing to learn by their mistakes, and that they will take what rights that are given to them; and just trash it away. Cover your *ss, is what it is called? Am I so wrong to think that there is hope for our society, when I am meeting people that JUST LOOKING OUT for themselves? These are people that might be government leaders. Yikes! I keep asking myself.. Is it the people of California, these days, that I am having a problem with? Or is it the upcoming generation?

I probably will be off line for a minute... or a longer minute! What happens to all of this, when the world will flood out, cuz of the global warming?? Where will these people spend there money? Will the young even care cuz its not happening to them NOW!?! Why would I put this post on my health blog? Knowing this, and unable to do anything about it, has caused my pressure to rise! Has this also put me into a mild depression? With that said, is my eating and sleep schedule.. oh, what schedule ? Ahh, now my blood sugar has gone wacko!

Coffee on the Agenda, Again

Well, my goodness! I really start to wonder, whether or not coffee is good for us or not!?! I have been drinking coffee for years. I am not a heavy drinker, or anything like that. Although it is a little harder to get up and go without it. I have read so much against drinking the stuff, and then... All of a sudden its like I am not drinking enough of it. This article that I just read.... Makes me think what really is going on!

"Earlier studies indicating that coffee may lower the risk of type 2 diabetes may not have been mere aberrations. According to a new Johns Hopkins University report, regular coffee drinkers are indeed less likely to develop type 2 diabetes than those who avoid coffee altogether. The current study was based on data from over 12,000 middle-aged adults, whose lifestyles and diabetes status were monitored over the course of 12 years. Among those adults who drank four or more cups of coffee each day, diabetes rates were 33% lower than among non-coffee drinkers. Researchers identified the coffee compounds magnesium and chlorogenic acid, which may regulate blood sugar, as possible factors in the link. Complete findings from the study were published in a recent issue of the American Journal of Epidemiology" .LifeScripts.com

Yea, with reading this, Now I am not drinking enough... really!I usually drink about 2 cups a day. I cannot imagine to drink more than that, at least for me. In reading so much about things against caffiene, I am really starting to wonder.... Is anyone just as confused as I am?

To think, I thought It was Taste!

I really thought that it was the taste, that had to do with Decaf Coffee. Well, outside of the fact that there is no caffiene in it... But I guess I was wrong! Is there anything that we can really 'assume' to take as is, without having to read the package? Normally, I am a 'package reader', but I would not think that I would have read the package for coffee... of all things.

"Here's some surprising news: Decaf coffee can still contain enough caffeine to boost your mood, wake you up, help you concentrate -- and get you hooked on caffeine. Three 8-ounce servings may contain as much as 21 milligrams (mg)
-- enough to do the job. Other signs your body craves the fix? Headaches or sleepiness when you skip it.......
Few decafs are 100 percent caffeine-free. Many brewed varieties contain up to 7 mg of caffeine per 8-ounce serving; a 1-ounce serving of decaf espresso can have up to 16 mg.

That may not seem like a lot when you consider the caffeine content of other beverages (90-135 mg for 8 ounces of caffeinated coffee; 35-50 mg for an ounce of espresso; 40-60 mg for a 12-ounce cola; 15-50 mg for 8 ounces of tea), but caffeine is a powerful -- and legal -- psychostimulant, which means that even small amounts may affect you.

Caffeine acts like an all-around upper. It decreases fatigue, increases alertness, and gives you a mood boost. But it has a dark side, too. Consuming too much can make you anxious and send your heart rate and blood pressure soaring. It's also addictive, which means that stopping your five-cups-a-day coffee habit cold turkey may cause withdrawal symptoms. Translation: It'll make you sleepy, nauseous, irritable, and headachy.

Some people are more sensitive to caffeine than others. If you get the shakes and feel anxious after sipping a cup of coffee or a caffeinated cola, nix it from your diet; same if you have high blood pressure, arrhythmias, or an anxiety disorder. And if you're really sensitive, you might just want to ditch decaf, too."...RealAge.com

Brain Scans Show Effects of Shopping

"Your cart comes to a stop in front of that big-screen plasma TV set you've been salivating over. Your conscious mind races, calculating tax, budgeting, imagining how you're going to lug the thing up the stairs. But what's going on behind the scenes? In a new study, brain researchers shed light on the neurological process behind our shopping decisions. Published in the journal Neuron, the study used MRI scans to track the brain patterns of consumers making shopping decisions. A portion of the brain known as the nucleus accumbens activates when someone first comes across an attractive item. When your eyes wander to the price tag, however, a region called the insula goes into overdrive while the mesial prefrontal cortex shuts down. Researchers plan further studies to examine how marketing and pricing techniques may manipulate consumers' "subconscious brain patterns."...LifeScripts.com

I don't think I have ever had shopping quite explained to me as in this little piece of tidbit, So, I had to share it!

Diabetes Cases Double Among Native Americans

Well, I thought this to be an interesting peice of tidbit. Its a bit scary to think that Diabetes has been become such a fast growing illness and it seems like it not a predjudice thing.... either. This makes me feel more impelled to make sure that we all really have to be aware and to spread the knowledge. Ignorance should not be an option!

"The number of Native Americans suffering from diabetes has nearly doubled over the past decade, and a new study warns that the problem has grown especially acute among youth. According to researchers at the Centers for Disease Control (CDC), working in conjunction with the Indian Health Service, diabetes incidence among Native Americans younger than 35 now stands at 2.2 per 1,000 population, double the 1994 rate. Statistics are even more grim in the upper age brackets, with Native Americans in their mid-30s suffering a diabetes rate of 46.8 per 1,000 people. Women were significantly more likely to have diabetes than men. The study's findings were published in a recent edition of the Morbidity and Mortality Weekly Report." - Information @ LifeScripts.com

Its Saturday! Good to be Home

Well, today is the first day that I have had to myself in quite a long time. It actually feels pretty good. I got alot done. Did some laundry, and emptied a few boxes, and there is MORE than a pathway now! LOL

Anyways... I was reading something that really struck my interest and I wanted to share this with you. Sounds like it could be a good thing! :D StemCell and Insulin?

" Stem cell therapy has incited both controversy and hope, with a new study offering further cause for optimism. According to Tulane University researchers, transplanted adult stem cells may help stimulate the natural production of insulin. The study, published in the Proceedings of the National Academy of Sciences, was based on laboratory trials involving diabetic mice who received human stem cell transplants. Mice who were treated with the stem cell therapy experienced significant improvement in insulin production, lowered blood glucose levels and fewer incidents of hyperglycemia than untreated mice. Researchers planned further study and expressed hope that stem cells may hold the key to repairing diabetes-related damage to the pancreas and kidneys." ....LifeScripts.com

I am aware that there is alot of different opinion on StemCell, Do you think it would worth it? My thought for the day!

Its Not Fair

Its not fair for me to even to post on this blogg. I am aware that I am not being right , at the moment, to say that I can even qualify for this awareness, right now. With all the things that I have been going through, I am aware enough to say that I am not being true. Things are happening so much, that I am so looking forward to the same ole, going to work, dealing with customers and their questions, and even just to come home and chill.

I have had my kids to thank, at the moment to keep me on the up and up. Alot has been going on that even when I know I should be doing something, there is something else that is going that seems to take presidense.

Some of the papers that I ran across today at my brothers' apartment, were his dialysis reports. It had alot to do with his overall readings, and eating habits, and just over ALL! They were scored...'Execellent'! It was real hard for me today, and I was just skimming over the papers that were appearing in my face. I should actually take that as a sign that I need to be more aware of the things around me, and that I make sure that I need to do what I am supposed to do. Alot of the times, it is good to keep a record of your readings, and of your diet, so that you can also know what foods will make you feel a certain way.

I also know that 'stress' can elevate your sugar level, so I really have to be careful of the things that I may want to snack, quickly! Some of the symptons that I get when my sugar is high, is when my eyes get blurry. Not good when that happens! But then, lately, I cannot say that my sugar levels are the cause of my blurriness, its been from the tears, and lack of sleep, and the burning eyes..gosh! Yea, I was really surprised, that even though I do wear contacts, and/or glasses, sometmes my eyes have been real sensitive. Anyways, now that things are alittle calmer, for the most part, I will be making sure that I will be more watchful of my readings, and what I am eating....
