Wow, Its been a LONG time since I have been...

Here! I know that I have been busy this past summer and going into the Fall... and already i am looking at Halloween! One day I was looking through my email, and this recipe struck me like.. What have been waiting for! I am in the mood for this then, and I am in the mood for it now! Beef Stroggie! Yeppers.. I think I will try to cook tonight, but it may be too warm of a day for this!

Beef Stroganoff Casserole

This savory beef dish has been a family favorite for many years…and with good reason!
Ingredients

1 lb. Ground beef
1 can Cream of mushroom soup; condensed
8 oz. Sour cream
1 can (small) black olives; sliced
1 can (small) mushroom stems and pieces
12 oz. Egg noodles
Directions

Cook egg noodles according to directions and set aside. Cook ground beef until it is no longer pink. Drain off grease. Add soup, sour cream, olives, mushrooms, and noodles and cook until heated through.

Serves 4

Of course this is the cheating way, in my opinion, but I think t just might work today!

Three Nutrition Tips for Diabetes

Managing diabetes mindfully means more than just monitoring blood sugar levels. It also means making prudent choices in your diet to address the risk factors of common diseases associated with diabetes, such as heart disease, high blood pressure and stroke. Work with your physician and a dietician to create a meal plan that best suits your needs. Research has shown that several nutritional elements may be helpful in managing diabetes-related issues:

1. Eat more magnesium-rich foods such as spinach, tofu, almonds, broccoli, lentils, pumpkin seeds and sunflower seeds.

2. Increase intake of foods rich in omega-3 fatty acids, such as cold-water oily fish, fish-oil supplements, walnuts and freshly ground flaxseed.

3. Choose foods that are lower on the glycemic index and have a low glycemic load, such as beans, lentils and whole-grain breads.

Something I just wanted to share!...Learning is such a process, isn't it ?

Knowing what I need to do!

Well, I know that recently, I have been a little... uh... is sloppy on my blog pages, or at least I feel that not all my blogs/posts are just not quite complete! and I apolojize for that... I know that I have been quite brief with my entries, and I am starting to feel a little guilty for that. Right now I am listening to Alison Krause, with the headphones on. Its been a while that I have just sit and listen to her music, and well, its bringing me back to when I was listening to her music all the time.. morning, noon and night!

Anyways, this picture that I took one morning as I was taking my daughter work..... I was not real sure as to what I should have done! I debated whether or not I should have pulled into this gas station and demanded that they honored the sign that was displayed. LOL.... The station that was across the street said the regular 87 Octane was going at 3.71! Well, the sign actually struck me in mid stream.. I had to stop and take a picture of it! Note -this picture was taken April 27, in the City of San Francisco...and that would be .. in 2007!
So, with that said, I decided to try to make my signs correct, and that is when I noticed that my bloggs have not been ..... well.... time to think about maintenance!

I was thinking last night, that... Well, many of you know that my brother passed away, and I have had some pretty heavy duty issues that I have had to face. Anyway, I was thinking... My God, its just been a little over 4 months..... and I think, how could I have gone through so much in such a little time. I am glad though that somethings are just coming together! Sometimes its times like this that I realize just how much I have to be 'Aware of' things that have pushed aside, and to readdress things!

Are you getting Enough B12?

Vitamin B12, also known as cyanocobalamin, is a water-soluble vitamin that is vital for healthy cells: it affects the development and maintenance of red blood cells, nerve cells, and normal myelination (covering) of nerve cells. It also aids in the production of DNA and RNA, and the synthesis of neurotransmitters. We can obtain vitamin B12 only from animal foods, including dairy, eggs, meat, fish, poultry, and shellfish, so vegetarians and vegans are often at risk for B12 deficiency.

New York switches from real to fake grass

NEW YORK (UPI) -- New York plans to spend about $150 million installing 100 synthetic playing fields in parks across the city over the next five years.

The artificial turf, which is supposed to be spongy enough to prevent most injuries, is cheaper and easier for Parks Department workers to maintain, the New York Post reported Monday.

The Parks Department started installing synthetic fields in 2002 and there are already 74 of them in parks across the city.

The turf, consisting of plastic grass on a bed of crushed old rubber tires, saves the city about $15,000 a year per field in maintenance costs, said the Post.

It also provides "a softness and sponginess that's more like real grass," said Parks Commissioner Adrian Benepe.
